Preheat oven to 350 degrees F. Rinse the strawberries and gently pat dry with a towel. Cut large strawberries into quarters and small strawberries in half.
1.5 lbs fresh strawberries
In large bowl, stir together the balsamic vinegar and honey. Season with freshly cracked black pepper to taste.

Add cut strawberries to the bowl and gently toss to fully coat.
Line a baking sheet with parchment paper. Spread the strawberries in single layer and bake for 30 minutes.
While strawberries are baking make the whipped feta. In a food processor, combine feta, Greek yogurt, extra virgin olive oil, and ground white pepper. Puree until smooth. Transfer to bowl, cover and refrigerate for at least 1 hour.
8 oz block feta cheese, 1/2 cup plain Greek yogurt, 2 tbsp extra virgin olive oil, ground white pepper
When the strawberries are done baking, cool for 5 minutes. Transfer to a bowl, cover and chill.
When ready to serve, transfer the whipped feta to a serving bowl. Spoon the balsamic strawberries on top and garnish with a drizzle of extra virgin olive oil, julienned basil and freshly cracked black pepper. Serve with your favorite toasted bread.
