Balsamic Strawberries & Whipped Feta Dip

  • Preheat oven to 350 degrees F. Rinse the strawberries and gently pat dry with a towel. Cut large strawberries into quarters and small strawberries in half.
    1.5 lbs fresh strawberries
  • In large bowl, stir together the balsamic vinegar and honey. Season with freshly cracked black pepper to taste.

  • Add cut strawberries to the bowl and gently toss to fully coat.
  • Line a baking sheet with parchment paper. Spread the strawberries in single layer and bake for 30 minutes.
  • While strawberries are baking make the whipped feta. In a food processor, combine feta, Greek yogurt, extra virgin olive oil, and ground white pepper. Puree until smooth. Transfer to bowl, cover and refrigerate for at least 1 hour.
    8 oz block feta cheese, 1/2 cup plain Greek yogurt, 2 tbsp extra virgin olive oil, ground white pepper
  • When the strawberries are done baking, cool for 5 minutes. Transfer to a bowl, cover and chill.
  • When ready to serve, transfer the whipped feta to a serving bowl. Spoon the balsamic strawberries on top and garnish with a drizzle of extra virgin olive oil, julienned basil and freshly cracked black pepper. Serve with your favorite toasted bread.
