Just like many, chicken can almost always be found in my freezer. Not really chicken breasts but instead chicken wings and chicken thighs. Despite always being stocked up on this poultry, it isnβt my favorite thing to cook. I guess itβs because I fall into chicken ruts. Chicken can get boring and if not prepared well, lack flavor. Luckily, I have an indoor electric grill that I used instead. It will take about 10 minutes for the chicken thighs to cook. This will vary depending on the size and thickness of your chicken. Make sure that you cook them until they reach an internal temperature of 165Β° F. Β If you donβt have access to a grill, I suggest getting a nice char on the chicken using a cast iron skillet and finishing in the oven. It will taste just as good.
Love citrus? Grill some lemon and serve it one the side. I completed this meal with sides of couscous and homemade hummus. Yes, I squeezed the lemon on everything! Rice and veggies is always a solid option too. Quinoa and salad would also be nice additions. Hopefully this will be a welcome change to your regular go-to chicken dishes.
