Greek Grilled Chicken Thighs

Just like many, chicken can almost always be found in my freezer. Not really chicken breasts but instead chicken wings and chicken thighs. Despite always being stocked up on this poultry, it isn’t my favorite thing to cook. I guess it’s because I fall into chicken ruts. Chicken can get boring and if not prepared well, lack flavor. I am constantly looking for new, interesting chicken recipes.

This recipe speaks to my love of Greek and Mediterranean flavors. It calls for boneless chicken thighs (I deboned the ones I had on hand). Keeping the skin on was a personal preference. However, you can absolutely do skinless thighs if you are looking for a healthier option. Who knew that Greek yogurt, lemon and a variety of dried herbs would create such flavorful chicken?Β

Due to social distancing, my community grills are currently off limits. Luckily, I have an indoor electric grill that I used instead. It will take about 10 minutes for the chicken thighs to cook. This will vary depending on the size and thickness of your chicken. Make sure that you cook them until they reach an internal temperature of 165Β° F. Β  If you don’t have access to a grill, I suggest getting a nice char on the chicken using a cast iron skillet and finishing in the oven. It will taste just as good.

Love citrus? Grill some lemon and serve it one the side. I completed this meal with sides of couscous and homemade hummus. Yes, I squeezed the lemon on everything! Rice and veggies is always a solid option too. Quinoa and salad would also be nice additions. Hopefully this will be a welcome change to your regular go-to chicken dishes.

Greek Grilled Chicken Thighs

This lemon, garlic and herbed Greek yogurt dip makes for tender and flavorful grilled chicken.

Ingredients

  • 4 chicken thighs, boneless
  • 1/2 cup Greek yogurt
  • 1/4 cup lemon juice about 1 large lemon
  • zest of half a lemon
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • 1/2 tsp dried rosemary
  • 1/2 tsp ground fennel seed
  • salt and pepper to taste

Instructions

  • In a large bowl, mix together Greek yogurt, lemon juice, lemon zest, dried herbs and fennel seed. Season with salt and pepper to your liking.
  • Place chicken thighs in yogurt mixture making sure to fully coat each piece. Cover and let marinate in the fridge for at least 1 hour but no longer than overnight.
  • Preheat grill to medium high. Grill chicken for approximately 15-20 minutes flipping halfway through. The chicken will be done when they reach an internal temperature of 165Β° F and juices run clear.
  • Let rest 5 minutes prior to serving.

Notes

  • Skinless thighs can be used for a healthier option.
