Mini Red Velvet Waffles

I have to be honest…. Valentine’s Day is not my kind of holiday. I am much more of a give and spread love 365 kind of person. However, that is not to say that I do not enjoy Valentine’s Day content. I enjoy the reds and pinks, sparkle and glitter, and hearts galore. It speaks to my closet hopeless romantic.

I know I am posting this just days before Valentine’s Day, but this red velvet waffle recipe is great year round. Whether you are making them to express your appreciation and affection or just as a way to switch up your normal weekend brunch, it is sure to bring smiles all around.

The recipe is quite simple, but it does call for a mini waffle maker. You can definitely make this in a standard size waffle maker, but I love the idea of the minis. Like many baked goods, you mixed the dry ingredients separate from the wet ingredients and then combine. From there you are a waffle making machine, churning out warm chocolate, deliciousness.

I encourage you to add the toppings of your choice. Because of this, the waffles aren’t exceptionally sweet. The added sweetness will come from your syrup, whipped cream, cream cheese drizzle… it’s all about balance, baby. Make these for your loved ones or yourself, just remember to sit back and enjoy the moment.

Mini Red Velvet Waffles

Equipment

Ingredients

  • 2 cups all purpose flour
  • 1/2 cup sugar
  • 1 tbsp baking powder
  • 3 tbsp cocoa powder
  • 1/2 tsp salt
  • 1 3/4 cups buttermilk
  • 2 large eggs
  • 1/3 cup unsalted butter melted
  • 2 tsp pure vanilla extract
  • 2 tbsp red food coloring

Instructions

  • In a medium bowl, mix together dry ingredients: flour, sugar, baking powder, cocoa powder, and salt.
  • In a separate large bowl, add wet ingredients: eggs, buttermilk, vanilla extract, and butter. Whisk until smooth.
  • Add food color to the wet ingredients and stir until well blended.
  • Gradually whisk dry ingredients into the wet ingredients. Whisk until smooth and well combined.
  • Turn on mini waffle maker. When waffle maker indicates it is ready, pour approximately 1/4 cup of waffle batter into the bottom iron of the waffle maker. The batter will be thick so use a silicone spatula to spread evenly.
  • Close waffle iron and remove when waffle is cooked through (approximately 2-3 minutes). Continue with the remainder of the batter.
  • Serve warm with your favorite toppings.
