Fresh Ube Champorado with Crunchy Fried Dilis

Fresh Ube Halaya

  • 1 lb ube, fresh
  • 1 stick butter
  • 1/2 can condensed milk
  • 1 can coconut milk
  • 1/4 cup turbinado sugar
  • *Fresh or evaporated milk

Steam the ube until tender. Peel once cooled and mash.ย Melt butter. Add the rest of the ingredients and mix thoroughly until it thickens into a jam. Feel free to adjust with fresh or evaporated milk to get the consistency you like.
Note: this ube jam is chunkier and less sweet than most store bought ones.

Ube Champorado

  • 1 whole batch of homemade fresh ube halay
  • 1.5 cups sweet sticky rice
  • 6 cups water
  • 1/2 can condensed milk
  • 1 can coconut milkย 
  • 1 tsp salt
  • *fresh or evaporated milk
  • *sugar to taste
  • *purple food coloring (optional)
  • *crunchy fried dilis

Cook sweet sticky rice with water into a porridge with one tsp salt. Add ube halay, coconut and condensed milk and mix until well combined. Adjust with fresh or evaporated milk until you reach desired consistency. Adjust sweetness with sugar in 1 tsp increments as needed. Add a few drops of purple food coloring to achieve a deep purple champorado (optional). Serve topped with crunchy fried dilis.
